ES to Granite (http://tanbrown.org)

We have been fabricating Zodiaq and (http://maplered.com) Cambria for the past 5 months now. Our company did just solid surface for the past 10 years. Now, we will be starting Granite (http://tanbrown.org) in a few weeks. My boss hired some guy with three years experience in Granite (http://tanbrown.org) . I was picking his brain yesterday and (http://maplered.com) remember him saying they would wax their edges on darker Colors (http://www.g640.net) . I saw how everyone is pretty much against using wax. Well, I want to do things right. I plan on finishing seams and (http://maplered.com) not using any wax on my edges. We polish edges on ES and (http://maplered.com) have done seamed corian undermounts in zodiaq without a problem and (http://maplered.com) they look great. What are some things I should be looking for in terms of fabricating differences and (http://maplered.com) what should I ask this guy to see if he is really any good?
